Ingredients

• 1½ pounds Kirby or Persian cucumbers (washed carefully, ends trimmed and sliced ¼-inch thick)
• 1 white onion (thinly sliced)
• 1 red pepper (cut into very small dice)
• ¼ cup kosher salt
• 1 cup white distilled vinegar
• 1 cup apple cider vinegar
• 2 cups sugar
• 2 teaspoons brown mustard seeds
• 1 teaspoon black peppercorns
• ¼ teaspoon crushed red pepper flakes
• ½ teaspoon coriander seeds
• 1 cinnamon stick (broken into pieces)
• pinch ground allspice
• 6 whole cloves
• ½ teaspoon ground turmeric
