Ingredients

• 4 large celery stalks, sliced ¼-inch thick, diagonally
• 4 green onions, thinly sliced on a steep diagonal
• 2 Honeycrisp or sweet-tart apples, halved, cored, cut into ¼-inch-thick wedges
• 1 red jalapeño, thinly sliced, seeds removed
• 3 Tbsp lemon juice, plus more to taste
• Kosher salt, to taste
• Freshly ground black pepper, to taste
• ¼ cup roasted peanuts, coarsely chopped, divided
• ½ cup parsley leaves, divided
• 2 Tbsp extra-virgin olive oil, plus more for drizzling
