Smokey Bacon & Tomato Spaghetti Amatriciana

Ingredients

• 1 tbsp olive oil
• 1 pack smoked, streaky bacon (240g), cut into strips
• 1 medium onion, chopped
• 1 tbsp tomato puree
• 1 tsp sugar
• 1/2 tbsp red wine (or balsamic) vinegar
• 100ml red wine
• 3 cloves garlic, grated or crushed
• 1/2 tsp freshly ground black pepper
• 1 x 400g passata
• 300g spaghetti
• 30g parmesan, grated, plus more to serve
• 1 tbsp finely chopped parsley
• to serve (optional) chilli flakes
