• Finely shredded cheddar or Pepper Jack Cheese
• 1 onion, finely chopped
• 2 tablespoons vegetable oil
• 1 medium onion, finely chopped
• 2 garlic cloves, minced
• ¾ cup ground red chile, preferably Chimayó
• 4 cups water
• 1 teaspoon dried oregano
• 1 teaspoon salt
• 1 small onion, finely chopped
• 1 teaspoon ground cumin
• 1 tablespoon flour
• 2 cups chopped roasted green chile (fresh, frozen, or canned)
• 2 cups chicken stock or water
