Ingredients
- 3 ripe tomatoes, diced
- 4 spring onions, finely sliced
- ½ tsp oregano
- ½ tsp thyme
- 1tbsp olive oil
- 1tbsp red wine vinegar
- 800g frozen skinny fries
- 1tbsp Cajun Seasoning
- 180g Barbers coastal cheddar, grated
- 120ml sour cream
- Green chilli, chopped, as much as you dare
- Small bunch of chopped coriander
