Ingredients

• 2 cups unbleached all-purpose flour
• 2 teaspoons baking soda
• 1 tablespoon ground ginger
• 1 tablespoon ground cinnamon
• 1 1/2 teaspoons ground cloves
• 1/2 teaspoon ground cardamon
• 1/4 teaspoon cayenne pepper
• 1/4 teaspoon freshly grated nutmeg
• 1/4 teaspoon salt
• 3/4 cup unsalted butter
• 1 cup dark brown sugar, packed
• 1 large egg
• 1/4 cup mild molasses (not blackstrap)
• coarse or “sanding” sugar for decoration
