Rice Bake

Ingredients

• 1 1/4 cups textured soy granules,
• caramel colored
• 1 cup hot water
• 1/4 cup soy oil
• 1 1/2 cups chopped onion
• 1/2 cup diced green pepper
• 1 clove garlic, minced or pressed
• or (1/8 teaspoon dry)
• 1 teaspoon chili powder (optional
• 1/2 teaspoon salt
• 1 can whole tomatoes (16 o.z.)
• 1 can kidney beans (15 o.z.)
• 1 tsp sugar
• 3/4 cup uncooked rice
• 2/3 cup shredded cheddar cheese
