Ingredients

• 1 kg potatoes, peeled and cut into chunks
• 100 ml milk
• 4 spring onions, chopped
• 30 g butter
• 3 tbsp wholegrain mustard
• Salt and black pepper
• 800 g boiled bacon loin, chopped or shredded into bite-sized pieces
• 1 head of savoy cabbage, roughly chopped
• 60 g butter
• 1 large onion, sliced
• 2 tbsp plain flour, plus extra for dusting
• 200 ml chicken stock
• ½ tsp Dijon mustard
• 2 tbsp fresh parsley, chopped
• 150 ml single cream
