Chicken Lasagna

Ingredients

• 9 lasagna noodles
• 1 onion, finely chopped
• 3 tablespoons (45 ml) olive oil
• 1 clove garlic, finely chopped
• 10 cups (2.5 litres) lightly packed baby spinach
• 1 1/2 lbs (675 g) ground chicken
• Salt and pepper
• 1/3 cup (75 ml) butter
• 6 tablespoons (90 ml) unbleached all-purpose flour
• 3 1/4 cups (810 ml) milk
• 1/4 teaspoon (1 ml) ground nutmeg
• 1/4 cup (60 ml) grated Parmigiano-Reggiano cheese
• 2 cups (500 ml) grated Swiss cheese
