• 1 large onion, finely chopped.
• 1 1/2 cups leeks, cleaned and sliced (white and light green parts).
• 6 1/2 cups fresh celery, chopped and divided.
• 2 garlic cloves, finely minced.
• 4 cups good quality chicken stock.
• 2 fresh bay leaves.
• 1 1/2 teaspoons kosher salt, adjust to taste.
• 1/3 cup heavy cream.
• Fresh black pepper to taste.
• Fresh chives or parsley for garnish.
