Hay Baked Chicken - Meat Smoke Fire
This is a twist on the hay baked chicken recipe of Michelin starred chef, Tom Kerridge. The chicken is cooked in a Dutch oven filled with hay and cider.
Ingredients
- Hay – I selected a hay from a local pet shop containing quite a few herbs and wild flowers
- 1 large chicken
- 5 or 6 fresh bay leaves
- 500ml cider
- 6 or 7 garlic cloves
