Ingredients

• 300 g Golden Delicious or Braeburn
• 250 g butter, softened
• 250 g sugar
• ½ lemon, grated
• 1 small tsp cinnamon
• 1 tbsp rum
• a pinch of salt
• 4-5 eggs, at room temperature
• 250 g walnuts, finely chopped
• 250 g wheat flour, sifted
• 2 tsp baking powder
• Butter and slivers of almonds for the mould
• Icing sugar
