- 1 1/2 to 1 3/4 pounds Yukon gold potatoes (about 4-5 medium potatoes, thin sliced, peeled or not, I usually leave the peels on)
- 1 package (6.4 ounce) breakfast sausages (Banquet frozen original breakfast sausage, no need to thaw, 10 sausages)
- 1 medium yellow onion (cut in half and thin sliced)
- 1 cup chicken broth (maybe a bit more if needed)
- 1 cup half and half (room temp)
- 3 tablespoons butter, softened
- 1 1/2 teaspoons dried Italian seasoning
- 2 teaspoons kosher salt
- 1 teaspoon pepper
- 1 1/2 tablespoons all-purpose flour
