Sausage Lentil Soup - Glazier's Market

Ingredients

• 10 cups chicken broth
• 1½ cups French green lentils (or lentils of your choice)
• 1 lb hot Italian pork sausage, casings removed
• 3 carrots, peeled and chopped
• 4 celery ribs, chopped
• 1 small yellow onion, chopped
• 5 golden Yukon potatoes, cubed
• 4 sprigs thyme
• 1 bay leaf
• Handful of fresh parsley, chopped (for topping)
• 1 cup tubetti pasta
• Extra virgin olive oil
• Salt, to taste
