Ingredients

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper, and set aside.
  • To the butter and sugar mixture, add the eggs and vanilla extract. Beat to combine well.
  • Add the oats, flour, cocoa powder, baking soda, and salt to the wet ingredients, and mix until just incorporated.
  • Add the cherries, pistachios, and dark chocolate chips and mix again until well incorporated and evenly distributed in the dough.
  • Use a cookie scoop or tablespoon to drop dough onto prepared baking sheet.
  • Bake at 350 degrees F for 10-12 minutes, until just set in the center.
  • Remove cookies from the oven and let cool for 2 minutes on the baking sheet, then transfer cookies to a wire rack to cool completely.
  • Store cooled cookies in an airtight container for up to 5 days.
