Ingredients

• 1 tbsp olive oil
• 9 ounces 50 g mushrooms (sliced)
• 1 tbsp unsalted butter
• 1 shallot (finely chopped)
• 4 garlic cloves (minced)
• 1 celery stalk (finely chopped)
• 1 carrot (finely diced)
• 1 tbsp Italian seasoning
• 1 tsp salt
• 1 tsp black pepper
• ½ tsp chili flakes
• 1 pound mild Italian sausage (casings removed)
• 2 tbsp flour
• 4 cups chicken broth
• 2 cups heavy cream
• ¼ cup grated Parmesan
• 10 lasagna sheets (broken into smaller pieces)
• 2 ounces grated cheddar
