• 3 tbsp olive oil
• 1 medium onion, finely chopped
• 1 medium carrot, finely chopped
• 1 stick of celery, finely chopped
• 300 g small brown lentils such as castellucio from Brindisa
• 2 cloves garlic, crushed
• 2 bay leaves
• 700 ml tomato passata from Gastronomica
• salt and black pepper
• plenty of freshly chopped parsley
• 100 g parmesan cheese, shaved with a vegetable peeler from the Ham and Cheese Company
• extra virgin olive oil
