Veggie Pesto Pinwheels – Nom Nom Kids

Ingredients

• 1 tsp olive oil
• 1 medium carrot grated
• 1 small courgette or half a medium one grated
• 1/4 red pepper
• 1/2 smallish onion finely chopped
• handful spinach
• 50g mature cheddar cheese
• 1 pack of ready rolled Puff Pastry
• 1 tablespoon of basil pesto
• slice of Ham (optional)
