• 4 slices cut 1 inch thick Irish soda bread
• 1/2 lb cooked crisp and crumbled (drippings reserved) bacon
• 1/2 chopped yellow onion
• 1 chopped tomato
• 1/4 cup grated asiago cheese
• 1/4 cup grated cheddar cheese
• 4 large eggs
• 4 tablespoons melted Butter
• 1 tablespoon herbs de Provence
