Fabulous Fish Pie - Carolyns Absolutely Fabulous Events

Ingredients

• 5/6 large potatoes, peeled.
• small onion, chopped
• 2/3 carrots, chopped
• 3 ounces of butter
• 3 Tablespoons flour - maybe more
• good handful of cheddar cheese
• large pinch of English mustard
• approximately 1 pint of milk
• 11/2 pounds of white fish, cut into thick slices
• 2 large handfuls of spinach
• handful frozen or uncooked peas
• two hard boiled eggs, cut into eights - optional
• some chopped parsley if you have any lying around
• squeeze of lemon juice
• Salt and pepper
• knob of butter
