This summer fruit cobbler is a choose your own adventure recipe for any variety of stone fruit you happen to find.
Ingredients
- 6-8 cups peeled and sliced ripe summer stone fruit (any combination of peaches, plums, apricots, cherries, nectarines, or blueberries)
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 cup flour
- grated zest of 1 lemon
- 1 1/2 cups whole wheat pastry flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 6 tablespoons cold butter (cut into small pieces)
- 1/2 cup buttermilk
- 1 teaspoon vanilla
