• 1 tsp extra virgin olive oil
• 1 tsp dried oregano
• ½ tsp garlic powder or 1 small garlic clove, crushed
• 1 small handful spinach, roughly chopped
• ½ small red pepper, finely diced
• 6 button mushrooms, sliced
• ½ small red onion, finely sliced
• 80g grated mozzarella cheese
• 2 small handfuls parmesan cheese, finely grated
• 1 small handful fresh basil, thinly sliced (optional)
