Ingredients

• 2 tbs Olive oil
• 1/2 Onion
• 1 Red bell pepper, diced
• 1 Green bell pepper, diced
• 1 lb Ground beef
• 1 can Green chiles (4 oz)
• 1 can Black beans, drained and rinsed
• 1 can Refried beans
• 6 cups Shredded cheddar cheese
• 1 cup Frozen corn
• 30-35 Tortillas, cut into 2 inch strips
• 3 cups Enchilada sauce
