• 7 3/4 oz pastry flour
• 3 3/4 oz Truly Grass Fed Unsalted Butter, diced and chilled
• 1/4 tsp salt
• 1 egg yolk
• Cold water
• Sausage filling
• 9 oz pork sausage meat
• 2 spring onions, finely chopped
• 2 1/4 oz Truly Grass Fed aged cheddar cheese, grated
• Half of a medium sized apple, peeled and finely chopped
• 1 tsp Worcestershire sauce
• 1/2 tsp harissa mix
• 2 tsp thyme, chopped
• 1/2 tsp ground coriander
• Salt
• Freshly ground black pepper
• Egg wash (1 egg and 2 tsp water), to glaze
• Black sesame seeds, to garnish
