Instant Pot Chicken & Brown Rice - Olivia's Organics

Ingredients

• 2 tablespoons extra virgin olive oil
• 1 medium onion - diced
• 4 carrots - peeled and cut into 1-inch pieces
• 2 stalks Olivia’s Organics Celery - diced
• 2 cloves garlic - minced
• 1 ½ cups brown rice
• 1 teaspoon salt
• ½ teaspoon pepper
• 2 teaspoons Italian seasoning
• 1 ½ cups chicken broth plus more as needed
• 2 chicken breasts - approximately 1 pound
• 1 packed cup Olivia’s Organics Baby Spinach - chopped
• Freshly grated Romano cheese for serving
