Ingredients

• 1 1/2 cups zucchini, chopped
• 1 1/2 cups yellow squash, chopped
• 1 cup red onion, chopped
• 3/4 cup green pepper, chopped
• 3/4 cup red bell pepper, chopped
• 1 small eggplant, chopped
• 3 tablespoons olive oil
• salt, to taste
• pepper, to taste
• 12 ounces whole-wheat penne
• 1 cup pesto sauce, store-bought or homemade
• 2 cups cherry tomatoes, halved
• fresh basil, to taste, julienned
