Ingredients

• 2 ½ lb jewel sweet potatoes, peeled and sliced crosswise into ½”-thick rounds
• 1 cup lightly packed light brown sugar
• ¼ cup unsalted butter
• ½ cup water
• 1 Tbsp kosher salt
• 1 Tbsp apple cider vinegar
• ⅛ tsp ground cinnamon
• ⅛ tsp ground allspice
• ⅛ tsp ground ginger
