Ingredients

  • 1 medium shallot, finely chopped
  • 1 tablespoon(s) celery, finely chopped
  • 1-1/2 tablespoon(s) parsley, finely chopped
  • 3/4 cup(s) mayo, i used hellman's
  • 1 to 1-1/2 tablespoon(s) stone ground mustard
  • 1 to 1-1/2 tablespoon(s) ketchup
  • 1 to 1-1/2 tablespoon(s) horseradish
  • 1 teaspoon(s) worcestershire sauce
  • 1 tablespoon(s) paprika
  • 1-1/2 teaspoon(s) louisiana hot sauce, i used more
  • 1 teaspoon(s) lemon juice
  • SALMON:
  • 1 1/4 pound(s) wild pacific salmon, cut in 4 fillets
  • 2 tablespoon(s) cajun easoning, i used slam-ya-mama cajun seasoning
  • 2 teaspoon(s) salt
  • 2 tablespoon(s) butter
  • 1 tablespoon(s) olive oil
  • 4 to 5 clove(s) garlic, peeled and left whole
  • juice from one lemon
  • cilantro for garnish, optional
