• 1 pound dried navy beans, rinsed
• 8 cups water
• 1 smoked ham hock or 1 pound smoked ham, diced
• 1 large onion, chopped
• 2 carrots, chopped
• 2 celery stalks, chopped
• 1 teaspoon dried thyme
• 1/2 teaspoon black pepper
• 1/4 teaspoon salt (or to taste)
• 2 tablespoons butter
• 1/4 cup chopped fresh parsley (optional)
