• 1 Tablespoon olive oil
• 1 Tablespoon unsalted butter
• 2 cups shredded mozzarella cheese
• 1 medium green bell pepper, seeds and core removed, chopped
• 1 cup finely chopped yellow onion
• 1 pound medium shrimp, peeled and deveined
• Extra unsalted butter for frying
