• 250g strong white bread flour
• 1 tsp (from a sachet) fast-action yeast
• 1 tsp sugar
• 5 tbsp olive oil
• 300g minced beef
• ½ tsp celery salt
• ½ tsp garlic granules
• a good pinch dried chilli flakes
• 200g emmental grated
• 200g mozzarella block grated
• 1 red onion sliced into thin rings
• 400g tin cherry tomatoes drained
• 1 clove garlic chopped
• 2 tbsp tomato ketchup
• 2 tbsp mayonnaise
• finely diced to make 2 tbsp gherkins
• 1 tbsp American mustard
