Ingredients

• 1 lb (450 g) medium pasta shells
• 4 tbsp unsalted butter
• 1 large sweet onion, diced
• 2 cloves garlic, minced
• 3 tbsp all-purpose flour
• 1 1/2 cups half and half
• 1 cup whole milk
• 12 oz fresh spinach (or 10 oz frozen, thawed and squeezed dry)
• 1 cup white cheddar cheese, shredded
• 3/4 cup gouda cheese, shredded
• 1/4 cup parmesan cheese, grated
• 1/2 tsp kosher salt
• 1/4 tsp black pepper
• 1/4 tsp ground nutmeg
• 1/2 cup panko breadcrumbs
• 1/2 cup crispy fried onions, lightly crushed
