Apple Zucchini Muffins

Ingredients

• 2 1/4 cups white whole wheat flour
• 3/4 cup brown sugar
• 1/2 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 1 teaspoon ground cinnamon
• 1/16 tsp nutmeg
• 1 medium apple, grated, moisture slightly squeezed out
• ½ zucchini, grated, moisture slightly squeezed out
• 1 medium apple, peeled and chopped
• 1 cup buttermilk
• 1 teaspoon vanilla extract
• ¼ cup vegetable oil
• 1 large egg
