Ingredients

  • Balsamic
  • Italian Romano
  • Garlic Parmesan
  • With about 5 minutes of cooking time left, place parmesan or mozzarella cheese on top of the chicken breasts for a cheesey chicken breast in tomato sauce meal.
  • If you like a rich, creamy sauce, you could add 1/2 cup of half and half or heavy cream to the sauce.
  • For a spicy version of this chicken breast in tomato sauce recipe, you can add in 2 tsp. of chili pepper flakes to your sauce.
  • Or, if you like a tomato sauce with more vegetables, try adding sliced mushrooms, diced celery, or diced bell peppers to the recipe.
  • Sear the chicken per this recipe.
  • Sear the vegetables per this recipe.
  • Dump the tomatoes into your slow cooker, than add the vegetables and seasonings and stir.
  • Place the chicken on top of the sauce, then cook on high for 3 – 4 hours, until the chicken reaches 165ºF.
  • 2 Tbsp Butter
  • 2 lb Boneless Skinless Chicken Breast
  • 2 tsp Kosher Salt
  • 1 tsp Black Pepper
  • 1 Tbsp Olive Oil (light or cooking grade)
  • 1 Yellow Onion (diced)
  • 2 clove Garlic (minced)
  • 2 Tbsp Tomato Paste
  • 1 cup Dry White Wine
  • 1 can Diced Tomatoes (~14 oz.)
  • 1 can Tomato Sauce (~15 oz.)
  • 2 Tbsp Italian Seasoning
  • 1 lb Spaghetti
  • Parsley (chopped for serving)
  • Grated Parmesan (for serving)
  • In the same pot, add the olive oil, then add the diced onions and cook for two minutes, then add the minced garlic and cook for 1 minute. Add in the tomato paste and stir together.
  • While the chicken is cooking, prepare spaghetti according to directions on box and drain. Once chicken is cooked, remove from the sauce, and add the noodles. Stir to combine.
  • Serve slices of chicken over the tomato sauce and noodles with fresh parsley and grated parmesan on top for garnish. Enjoy!
