Cappuccino & Chocolate Chip Muffins recipe by Shaheda

Ingredients

• 1 Cup milk + 2 tablespoon vinegar (set aside for 10mins)
• 2 eggs
• 3 tablespoon sour cream
• 2 tablespoon oil
• 75g butter - melted
• 1 teaspoon vanilla extract
• 1 shot espresso
• 1 Cup sugar
• 2&½ cups flour
• 2&½ teaspoon baking powder
• 1/2 teaspoon bicarbonate of soda
• Pinch of salt
• 1/2 Cup chocolate chips
• 1 teaspoon cocoa powder
• 2 teaspoon instant coffee granules
• Add in wet ingredients with a mixer on low and mix well
• Add batter to muffin cups
• Sprinkle muscavado sugar and more chocolate chips
