Zucchini “Lasagne” With Tomato Sauce – Oracibo

Ingredients

• 1 Tbsp. EVOO
• 1 medium onion, chopped
• 1 clove garlic, minced
• 2 tsp. dried basil, crumbled or 1 ½ Tbsp. fresh basil, chopped
• 1 tsp. dried oregano, crumbled
• 1 tsp. fennel seeds
• ½ lb. lean ground beef
• ½ cup dry white wine
• 1 28 oz. tin Italian plum tomatoes, chopped, juices reserved
• 1 Tbsp. tomato paste
• Salt & freshly ground pepper to taste
• 6 large zucchini, each sliced lengthwise into 5 slices
• 8 Tbsp. freshly grated Parmigiano Reggiano cheese
