Baked Pineapple Chicken - Serving Dumplings

Ingredients

• 8 chicken thighs (bone-in/skin-on)
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp sweet paprika
• 1 tsp garlic powder
• 1 tbsp olive oil
• 1 tbsp unsalted butter
• ½ fresh pineapple
• 8 garlic cloves
• 1 tbsp grated ginger
• ¾ cup pineapple juice
• 3 tbsp brown sugar
• 1 tbsp toasted sesame oil
• ½ cup low sodium soy sauce
• 3 tbsp tomato ketchup
• 1 tsp chili flakes (for sprinkling, more or less to taste)
• 1 tbsp chopped chives
