Ingredients
- 3 Eggs
- 1 cup castor sugar
- 1 cup oil
- 3 teaspoons baking powder
- 1 ½ cups flour
- 2 teaspoons cinnamon
- Pinch of salt
- ½ teaspoon bicarbonate of soda
- 2 cups grated carrots
- ¾ cup chopped pecan nuts
- ¼ cup water
- Add oil and beat well. Soft dry ingredients and add to batter
- Add carrots and nuts
- Cream cheese icing
- 1 tub cream cheese- softened
- 115g butter
- 1 cup sifted icing sugar
- 3 teaspoons lemon juice
- 1 teaspoon vanilla essence
