• Zest of 2 limes
• 150g (¾ cup) granulated sugar
• 150g (⅔ cup packed) dark brown sugar
• 1 large egg, room temperature
• 1 large egg yolk, room temperature
• 1 tsp pure vanilla extract
• 1 tbsp (½ lime) lime juice
