Thumbprint Cookies – Love and Cook

Ingredients

• 125 g unsalted butter
• 65 g soft brown sugar (or castor sugar)
• 1 egg (separated)
• 1 teaspoon vanilla extract
• 150 g plain flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 125 g cashew nuts (or any mix of nuts, coarsely chopped)
• a little jam (or chocolate buttons to fill the indents.)
