Walnut-loaf-a-bix - Weetabix Cereals
Kick-start your day with a delicious Walnut-loaf-a-bix made from Weetabix cereals, perfect for a hearty breakfast!
Ingredients
- 2 Weetabix
- 450g plain white flour
- 7g sachet fast-action yeast
- 60g chopped walnuts
- 25g sunflower seeds
- 1 teaspoon of rapeseed oil
- 200ml milk
- 2 tablespoons of low-fat Greek-style natural yogurt
- 1 teaspoon of salt
- Strawberry chia jam (or store-bought strawberry jam), chopped figs and walnuts
- Mix all the ingredients in a bowl, adding enough milk to create a soft dough.
- Leave it to rise in a warm place for a few hours or until it has doubled in size. Punch the dough to deflate.
- Put into a stoneware pot, lined casserole dish or 1lb bread tin. Allow it to rise again in a warm place for a few more hours.
- Bake at 180c for approx. 40 mins until golden brown, coming away slightly from the sides and sounding hollow when tapped underneath.
- Cut your bread into thick slices, spread your strawberry chia jam liberally over each and top with fresh figs, walnuts and honey. Dee-lish.
