Lime Marinated Veggie Skewers

Ingredients

• 1/2 c olive oil
• 1/2 Red onion peeled and
• 2 Cloves garlic minced or
• 2 Thin zucchini 1-Inch Dice
• 3 Italian Roma tomatoes
• 1 ts Black pepper freshly ground
• 2 Bell peppers preferably
• 1 pt Pearl Onions parboiled For
• 1/2 c Lime juice freshly squeezed
• 10 oz White mushrooms wiped
• 1/2 ts Salt
