Asian Cucumber Salad Recipe

Ingredients

• 6 mini cucumbers
• 1/2 tbsp kosher salt, for draining, see notes 1
• 1 batch of sauce, see below
• 1 plump garlic clove, finely minced
• 1 tbsp coarse gochugaru (Korean red pepper flakes)
• 1 tbsp soy sauce or tamari
• 1 tbsp brown sugar
• 1 tbsp apple cider or white vinegar
• 1 tbsp sesame oil
• 1 tbsp lemon juice
• toasted sesame seeds, for topping
