• 2 tsp chopped garlic
• 2 tsp finely chopped onion

• 1 ½ lbs ricotta cheese
• 2 eggs, lightly beaten
• 1 ½ tsp garlic powder
• 1 ½ tsp onion powder
• 2 tsp chopped parsley
• 8 oz shredded mozzarella
• Salt
• freshly ground pepper
• ⅛ tsp nutmeg (optional)
• 25 oz Colavita Strained Tomatoes
• ¼ cup parmesan cheese
• Other
• Flour for dredging
• Colavita Extra Virgin Olive Oil, for frying or as needed
