• Finely grated zest of 1 lemon
• Finely grated zest of 1 small orange
• 1/8 tsp salt
• 2 1/8 oz egg whites (from 1 1/2 large eggs)
• 3 1/2 tsp honey
• 1⁄4 tsp orange blossom water
• 1/8 tsp best-quality almond extract
• 1 cup sliced almonds, for rolling
• 3 1/2 tbsp icing sugar
