Peach-Lime Skillet Cake - Rick Bayless

Ingredients

• 9 tablespoons butter, at room temperature (divided use)
• 1/2 cup Piloncillo , finely chopped (or brown sugar)
• 1 generous pound ripe peaches, peeled, pitted and cut into 1/2-inch wedges (you need a generous 3 cups total)
• Zest of one lime
• 1 1/2 cups all-purpose flour
• 1/2 teaspoon salt
• 1/4 teaspoon baking soda
• 1 1/2 teaspoons baking powder
• 3/4 cup white sugar
• 1 egg
• 1 teaspoon vanilla extract
• 3/4 cup plain whole-milk yogurt
