Ingredients

• 2 cups long grain white rice
• ½ lb duck liver
• ½ lb cleaned duck gizzard, finely chopped
• ¼ lb duck hearts, finely chopped
• 1 lb pulled duck meat, rough chopped
• 2½ cups duck stock
• 3 tbsp. vegetable oil
• 1 cup yellow onion, chopped
• ½ cup green bell pepper, chopped
• ¼ cup celery, chopped
• 2 cloves of garlic, minced
• 2 whole bay leaves
• 1 bunch green onions, thinly sliced
• ¼ cup parsley, fine chopped
• Salt and pepper
• Pepper vinegar
