Ingredients

• 1 cup yellow cornmeal
• ½ cup all-purpose flour
• 1½ teaspoons baking powder
• ½ teaspoon salt
• ¼ teaspoon cayenne pepper
• 1 small onion (finely chopped)
• ½ cup buttermilk
• 1 large egg
• 1 quart vegetable oil (for frying)
