Fennel Soup (Sopa de Funcho) Recipe

Ingredients

• 1 whole fennel, bulb and greens, chopped to bite size pieces
• 1 yellow onion
• 1 to 2 cloves of garlic, minced
• 1, 6 ounce can of tomato sauce
• 1 tablespoon of olive oil
• 1 tomato, chopped
• 1 to 2 carrots, chopped
• 1 to 2 potatoes, cubed
• 1, 14 ounce can of dark kidney beans, drained
• Salt (to taste)
