Marcus Wareing's Christmas Cabbage

Ingredients

• ½ Red cabbage, finely chopped
• 1 tsp table salt
• 1 garlic clove
• 4cm piece of fresh ginger, peeled and finely sliced
• 2 Cinnamon sticks
• 3 Star anise
• 1 tbsp Gochugaru
• 2 tbsp Red wine vinegar
• 1 tbsp Soft Brown Sugar
• 1 Orange, zest (and squeeze of juice)
